1. Heat your grill, cast-iron skillet, or frying pan to medium-high heat.
2. Season the tops of each burger patty lightly with salt and pepper. Place the patties onto the grill, skillet or frying pan with the seasoned side facing downward. Season the reverse side that is facing upward.
3. Cook the sides without moving them until they have formed a caramelized surface, which should take 2-3 minutes.
4. Flip and cook the second side of the burger. Due to the high marbling, the meat is best enjoyed at least at a medium degree of doneness.
5. Once cooked, remove the patties from the heat, and allow them to rest for 5 minutes before serving.
6. Assemble and serve your burgers with your favourite condiments and toppings.
